SWEET POTATO & EGGPLANT BOATS

RECIPE:

Serves: 5 people | Time: 45min

  1. Sweet Potato (3-4 depending on size)

  2. Eggplant (2)

  3. 1tbsp of Olive Oil

  4. Feta Cheese (1 block)

  5. Prosciutto (1/2 pack)

  6. Thin chicken breasts (1 pack)

  7. Arugula (2 cups)

  8. Tomato (2)

  9. Mozzarella cheese (2 cups)

  10. Balsamic Glaze (1 tbsp)

 

STEP BY STEP:

STEP 1: Wash sweet potato and eggplant

STEP 2: Pre-heat oven to 425F

STEP 3: Cut and slice sweet potato into 3’s or 4’s and lay flat

STEP 4: Cut and slice eggplant Into 4’s and flatten pointed layer from the cutting

STEP 5: Take a spreading brush and spread olive oil on the top of all vegetables and place into the oven

STEP 6: 20 minutes into leaving the vegetables in the oven, take a fork and poke small holes into sweet potato

STEP 7: While vegetables are cooking… crush one block of Feta, shred Mozzarella, and slice tomato

STEP 8: Turn on bbq grill or warm up skillet.

STEP 9: Dress chicken in olive oil, oregano & salt, then place on grill

STEP 10: Once chicken is cooked, remove from hit & shred into small pieces

STEP 11: Remove all eggplants from the oven… Place mozzarella & sliced tomato on them and place back into the oven for approx. another 12 min

STEP 12: Once sweet potato has been cooked (can put a fork through without struggle), remove and set aside for 5 min

STEP 13: Remove eggplant from oven & place on a serving tray

STEP 14: Here is where you can get creative! I dressed the sweet potato in Three ways;

  • Chicken, feta, tomato

  • Prosciutto, arugula & balsamic glaze

  • Tomato, feta & Balsamic

 

STEP 15: Place on serving tray and serve to eat!
